English Egg Cheese Muffin

Mornings can be extremely hectic at times. For the majority of us being able to eat prepared food in the morning is a luxury. Far too often people end up spending their hard earned cash on expensive and unhealthy cafeterias, and fast food restaurants. It can be a harsh realization on the day you go through your expenses and realize the majority of your money is going towards eating out. It was that type of thinking that initiated the thought of wanting to make breakfast foods that didn't take too long to get done. Most of the time I started preparing my foods for the week or the night before so that they will be easily accessible when needed. In the long run, this saves me time, energy and most of all money ! Today I'm going to show you how I prepare English Egg Cheese Muffins.  

Here's a list of all the ingredients I use 

  • 9 Thomas Original English Muffin ( the packs I purchase come in 9's) 
  • 3 Reduced Fat Colby- Jack Cheese Sticks 
  • 18 carton Eggs 
  • Olive Oil 

Here's a list of hardware that you can use to prepare the food 

  • Muffin tin 
  • Sandwich bags 
  • Spatula

This recipe is so easy I actually felt guilty for not having to put in more effort . I usually use 9 eggs since the Thomas Original English Muffins I purchase come with 9 muffins. To start preheat your oven to 350 degrees . Take your muffin tin and coat 9 muffin holes with olive oil .
Once you've coated the inner 9 holes you can break 1 egg per muffin hole and then season the egg any way you'd like by sprinkling a little seasoning on top .
Once the oven has completely preheated you can then add add the muffin tin and cook for around 6-7 minutes.

In the meantime take 9 of the Thomas English muffin and slice them in half with a serrated bread knife.Once the eggs are done cooking for 6-7 mins they should be about halfway set.
Now would be a perfect time to add cheese so that it doesn't over cook . You can take 1  reduced fat colby cheese stick and break it into thirds. Place 1/3 of the reduced fat colby cheese stick per egg in the muffin tin .
Put them back in the oven for 6-7 more minutes and by the time they are done, your cheese and egg shall be perfectly melted and set . The egg will be creamy like a true sunny side up.
If you prefer a more done egg add a few additional minutes . You can then take a spatula and pop the egg out of the muffin tin and place it on 1 English muffin . Once you've placed all of the eggs on muffins you will have 9 completed muffins for your workweek and little left for the weekend.

The best part about this recipe is you can modify it any way you like, by adding more eggs, removing egg yolks, adding veggies, or whatever suits your tastes .
